Moisture content was determined by drying the samples to
constant
weight
at
105
±
2 ◦C. Fixed mineral residue was deter
mined by incinerating the samples in a furnace at 550 ± 1 ◦C
and subsequently weighing them. Total nitrogen was deter
mined through the micro-Kjeldahl method and protein wa
calculated by nitrogen × 6.25. Total lipids were extracted with
ether
in
a
Soxhlet
system.
Total,
soluble
and
insoluble
diet
fibe
contents
were
determined
through
the
enzymatic–gravimetri
method.
The
AOAC
(2005)
methods
were
followed
in
all
such
cases.
