Whether all six phosphates in phytic acid (IP6) were hydrolytically
cleaved to inositol was evaluated by subjecting a soy-based
infant formula to hydrolysis well beyond 4 h, as illustrated in
Fig. 5. A constant concentrationwas not consistently achieved until
after 24 h so a time of 32 h was selected for further studies to
ensure analytically consistent results. Similarly, phytic acid was
hydrolysed as shown in Fig. 5, theoretically producing 27.3% by
