To examine the entrapment of β-carotene from sea buckthorn juice in furcellaran beads, the added juice content was increased and the β-carotene in furcellaran beads was measured (Fig. 5).
β-carotene content of sea buckthorn juice was 11.5 mg/100 g. While using 100% v/v juice for making the furcellaran beads, the β-carotene content in the beads was 11.12 mg/100 g, showing that the encapsulation efficiency of β-carotene in furcellaran capsules was 97%. It suggests that furcellaran beads may be applicable in encapsulating β-carotene. The results obtained in the present work show that furcellaran can well be applied as a potential encapsulation material.
