Methoxyl content is an important factor in controlling the setting time of pectins, their combining power with metallic ions and the ability of the pectin to form gels. The methoxyl content was highest (3.70 ± 0.09%) using microwave dried peel at 45°C using hydrochloric acid. For sun dried peel, the value was highest (1.60 ± 0.07) using nitric acid at 90°C but the value is not as higher as in former (figure-4).
