The optimum values were found by numerical solution of the
regression equation, resulting for almond gum in a pressure of
300 MPa, in a number of passes equal to 9 and in an emulsifier
concentration of 5.7%. For gum arabic, optimum conditions consisted
instead of pressure of 300 MPa, in a number of passes equal
to 10 and in an emulsifier concentration of 10%. Under optimum
conditions similar mean droplet sizes are predicted: 496 nm for
almond gum and 506 nm for gum arabic, confirming that almond
gum can be an effective surrogate for gum arabic, although
requiring different high pressure homogenization processing conditions
for emulsion formation.
