that of ascorbic acid. Fujinami et al. and Takebayashi et al. have reported similar results.20,21 Takebayashi et al. suggest that AA-2G was affected by the dissociation degree of the acidic hydroxyl group of ascorbic acid at the C-3 position. As a result, ascorbic acid showed a better DPPH radical scavenge activity at neutral pH. Although the DPPH radical removal ability of AA-2G was lower than that of ascorbic acid, AA-2G was still a good alternative of ascorbic acid because of the better stability. AA-2G could be used in cosmetic lotion to be an antioxidative ingredient.
