Welcome to the Child Nutrition Global Cookbook project!
This course has reached hundreds of thousands of learners around the world. There is so much that we can learn from one another, so I would like to invite you to share some of your favorite family recipes with your fellow learners within this wonderful, diverse community.
The idea here is to feature ingredients that are local to your geographic region (country, state, province, town) to create a healthy meal and teach others to follow your lead. Knowing a bit about the many countries represented in the class, I hope that we will receive recipes from Shanghai to Sicily, from Chicago to Calcutta, from Brasilia to Burundi. I can't wait to see what you come up with!
Whether you have already completed the course or you're brand new to it, we think you'll find this a useful place to get to know your classmates and learn from one another.
This section of the course is completely optional - you can choose to submit recipes, to review others' recipes, or to skip it completely.
What is the Child Nutrition Global Cookbook?
It's a place to:
•Post recipes that others can see and appreciate that use local, real food ingredients
•Post pictures of the healthy meals that we make for ourselves and our families
•Demonstrate that we are putting the knowledge from this course into action
•Connect with other learners around the world
Review criterialess
After you submit your recipe, others will get a chance to see it and respond to it.
The questions I will use to help other learners respond to your recipe are:
1.Did the learner upload a recipe?
2.Is the recipe understandable? Do you think you could cook this, or something similar, if you wanted to?
3.Did the learner include a picture of the finished dish (or a picture that closely resembles the final product?)
4.Did the learner explain why the recipe is healthy using some of the concepts explained in the course? (For example: Does the recipe contain different colored vegetables, minimally processed, complex carbohydrates like whole grains or naturally occurring unsaturated fats/oils? Does it contain allium vegetables and are common allergens correctly identified in the ingredient list?)
5.Did the learner include ingredients that are local to his or her geographic region?
6.Give this learner any additional feedback about the recipe. You may want to include things like:
•Whether you are planning to cook this recipe yourself, using the same or similar ingredients that are available to you
•What you liked about the recipe
•What you liked about the incorporation of local, real food ingredients in the recipe
•You can also mention some ingredients that are local to your geographic region which could be substituted in this recipe. For example, if you live in China, you might use congee/zhou instead of oatmeal.
Posting Picturesless
In this section of the course, you'll be asked to post photographs of the recipes and healthy culinary creations that you create for yourselves or your families.
You can take these pictures with a cell phone camera or digital camera and upload them through your computer.
Using standard photo formats like ".png" or "jpeg", the pictures should show up nicely.
If you don't have a camera, you can choose a picture online that closely resembles the finished dish (if you do choose a picture, please indicate that the picture is not taken by you and cite the website or source where the picture was found).
