CE-NPs with three sizes (112 nm, 215 nm and 527 nm) were prepared by ionic gelification reaction. TGA displayed that the encapsulation efficiencies of CE in 112 nm, 215 nm and 527 nm CE- NPs were 12.43%, 19.93% and 20.65% respectively. Among the pork samples wrapped with the active LDPE films of CE-NPs, 527 nm- treated CE-NPs exhibited the excellent antioxidant and antimicro- bial property of the pork during 15 days of refrigerated storage. Therefore, CE-NPs with big size would extend the shelf-life of food during chilled storage.
