Storage studies
Dehydrated dates (100 g) prepared from immature dates with optimized conditions were packed in metallized polyester polyethylene (MPP) pouches containing 12 m metallized polyester and 38m polyethylene, heat sealed and stored at ambient conditions for a period of 6 months. Moisture content, titrable acidity, reducing sugars, total sugars, ascorbic acid content, tannins and NEB were analyzed at regular intervals of storage.
