SSF water-soluble extracts were prepared by suspending freeze-dried fermented beans in distilled water (1:10, w/v) and kept in continuous agitation for 1 h at room temperature. Extracts were centrifuged at 14,534g for 15 min at 10 C (Sorval, model RC 6+). Supernatants were filtered through Whatman No. 1 paper, freeze-dried and stored under vacuum at 20 C until further analysis.
