3. Results and discussion
3.1. Dynamic light scattering measurements
The intensity size distributions and the volume size distributions functions for 0.25 wt% solutions native BSA and the
BSA
TA
preheated at different temperatures and pH 5.4 are shown
in Fig. 1. In such conditions, the average zeta potentials of
the native BSA (z
za
BSA) and BSA
TA
(z
za
BSA) were −8.45 mV and
−11.6 mV respectively according of 10 measurements. Such negative value of the zeta potentials for the BSA
TA
was sufficient
to register complexation with the gelatin by DLS measurements
(z
za
Gel= +5.90 mV). Our preliminary experiments shown that the
intensity size distributions for BSA does not depends on the concentration, at least in the range from 0.1 wt% till 0.5 wt% (data
not shown). One can see from Fig. 1 that approximately 90%
of all BSA particles have the average radius 3.7 nm that is in
accordance with known data [19]. Preheating the BSA sample at
