2.1. Meat samples
Samples were taken from both legs of 180 entire
male lambs, 60 individuals from each one of three different
Spanish breeds: Rasa Aragonesa (local meat
breed), Churra (local dairy breed) and Spanish Merino
(specialised meat breed). Within breed, three slaughter
live weights (n = 20, each) were considered: 10–12 kg
