Table 1 presents the physicochemical characterization ofwastewater, organic matter expressed as total COD and totalBOD is about 3500 and 2035 mg L−1, respectively, FOG concen-tration is high, about 1114 mg L−1; furthermore the associationof turbidity with TSS and color is featured. The presence ofionic species such as sodium, potassium, calcium, sulfate andchloride is significant; these ionic species are traces of somesalts used in the production processes of cold meat, such assodium nitrite and nitrate, potassium phosphate (Johns, 1995;Heponiemi and Lassi, 2012).
