storageconditionsanddemonstratedstabilizingefficacy compar-
able tocommonlyusedsyntheticantioxidants,BHA(200ppm)at
its legallimit.Mangosteenpeelextractprolongstheshelf-lifeof
sunfloweroilagainstheatdeteriorativechanges.Mangosteenpeel
is oneofthemostimportantsourcesofnaturalantioxidants.
Therefore,mangosteenpeelextractcanberecommendedasa
potentsourceofantioxidantsforthestabilizationoffoodsystems,
especially unsaturatedvegetableoils.
