Environmental factors might play an important role in
determining the fragrance. For example, in Kyauktada, Basmati
and IL had the strongest fragrance compared to other planting
locations. In Kyauktada, the planting time was two weeks later
than at the other sites. The majority of the lines were flowering
when the temperature at night was below 20 8C. All the lines were
exposed to the low temperature during the grain filling period,
which increased the accumulation of 2AP in the rice grains. Itani
et al. (2004) reported that low temperature (day; 25 8C and night;
20 8C) during ripening and early harvesting stages increases the
2AP concentration in two cultivars of brown rice. In Basmati rice,
fragrance reportedly varied depending upon the flowering time.
This result clearly confirmed the biochemical analysis of 2AP.
Nadaf et al. (2006) showed that Pusa basmati rice grown during the
summer had no detectable 2AP, but contained 0.030 ppm of 2AP
when grown during the rainy season.
