1.Cook the Spekko Rice according to the instructions on the packet.
2.Fry the bacon until just crispy and set aside.
3.In a new pan, heat a little bit of sunflower oil and fry the onions and peppers until translucent.
4.Add the mushrooms and cook.
5.Finally add the tomatoes and cook a minute or two.
6.Mix the warm rice with the bacon and mushroom mixture.
7.Garnish with parsley and serve warm.
