To improve on the accuracy of this calculation, changes in volume
ratio were allowed for by using the equilibrium constant (K)
for encapsulation (Kencap) and release (Krel). The products of (Kencap)
and (Krel) for tryptophan, riboflavin, dipeptide and pentapeptide
were calculated as 1.05, 1.00, 1.09 and 0.99 respectively. The
results show an almost perfect correlation between the encapsulation
and release kinetics, which is indicated by a value of 1. This is
advantageous as when high levels of encapsulation are obtained
there will subsequently be low levels of diffusional losses, meaning
high levels of both encapsulation and retention of potentially valuable
bioactive ingredients is achievable.
