The protease activity was assayed at various temperatures (25–
80 C) to determine the optimum temperature, at pH 11.0. In order
to establish the thermal stability, prior to enzymatic activity, the
enzyme preparation was incubated for 30 min at temperatures
ranging from 25 C to 80C. The incubated temperature of the
preparation was lowered to 25 C and its proteolytic activity
assayed.
