Chablis and most other white burgundies are made from the Chardonnay grape,and they do taste quite different from most Napa Chardonnays.there are three reason: terroir, viticulture, and enology. Terroir is the sum of all that is natural that affects a piece of land, including soil, climate, diurnal temperature shifts, and length of growing season (see entry 190). Viticulture(the branch of horticulture dealing with grapes) is the product of tradition and trying to make the most of a piece of land. Enology cover everything from harvest through the end of bottle aging. It is driven by the winemaker’s taste and the marketability of the final product.
