In summary, the present study showed that proteases supple- mentation to high gravity beer brewing is beneficial for a successful fermentation performance. Among the studied three proteases including Neutrase, Flavorzyme and Protamex, supplementation of Flavorzyme exhibited the best fermentation performance in terms of improved wort fermentability, higher ethanol yield and flavor volatiles concentration for each of the corresponding gravities. In addition, proteases supplementation had little impact on the beer foam stability. Therefore, proteases supplementation could be used as an efficient strategy to overcome the major problem associated with nitrogen limitation in the case of high gravity beer brewing.
