Parmigiano-Reggiano is made only in Italy in the provinces of Parma, Reggio-Emilia and Modena, and in specific regions in the provinces of Bologna and Mantua. The recipe and process for making Parmigiano-Reggiano is regulated by D.O.C. laws. Genuine D.O.C. approved Parmigiano-Reggiano will have the words "Parmigiano-Reggiano" stamped into the rind.
If a cheese is called Parmesan instead of Parmigiano-Reggiano, it may or may not be genuine Parmigiano-Reggiano. In the EU, laws guarantee that cheese labeled as Parmesan is genuine Parmigiano-Reggiano. In the United States and other countries, any type of cheese can be labeled as Parmesan.
