Droplet size analysis
We measured the particle sizes of different nano-emulsions
stabilized by soya lecithin and tween 80, immediately
after homogenizing. The minimum size that can be
achieved generally depends on the viscosity of materials
used and on applied homogenization parameters (number
of cycles and pressure). In our study, the average droplet
size was 143 nm and the polydispersity index was 0.16. To
obtain a distribution of centered size, we had to perform
five successive cycles of homogenization, hence demonstrating
that the size of the nano-droplets depends not
only upon such physical parameters as number of cycles
and pressure, but also on oil composition and the surfaceactive
properties of the soya lecithin used [20,21].
