Junior Sous Chef
Job description
Our client are currently seeking to recruit a Junior Sous Chef for their superb 5 star London hotel
The Junior Sous Chef will engage and be driven to assist the Head Chef enabling the team to achieve the highest levels of standards and service Preparing food to the highest quality to ensure guest expectations
Main Duties:
The Junior Sous Chef will provide supervision across all activities concerning food preparation, kitchen and storeroom areas
Supervises personnel to ensure cleanliness of the kitchen and equipment
Samples, smells and observes food to ensure conformance to recipes and standards
The individual will maintain food quality control and ensures proper food rotation, which will eliminate spoilage and waste
Participates in menu planning and food production
Control food costs
Communicates with and assists back-of-the-house personnel to maintain efficient food production
Conducts daily food line inspections to ensure quality is maintained
Inventories and purchases food items, kitchen supplies and equipment
Inform the FOH personnel of menu changes, specials & shortages
Responsible for maintaining budgeted food and recipe costs
Requirements:
City and Guilds 706/1/2/3 or similar qualification
Apprenticeship in a Pastry and Bakery followed by position as Commis Chef, Chef de Partie on all sections
Very good knowledge of traditional and nouvelle dishes
