Hence, heating plasticised proteins
above their glass transition produces soft and rubbery materials
that can be easily shaped. On the other hand, they increase the flexibility
and the extensibility of the final product (Gomez-Martinez
et al., 2009; Jerez et al., 2007b) and reduce its brittleness. Therefore,
controlling the different processing operations as well as plasticiser
nature and content would allow materials with unique properties
to be obtained (Pommet et al., 2003).
