Although Yog-2 had a similar particle size distribution to that of
Yog-4, the presence of non-ropy EPS made it more similar to Yog-1
(Yog-1 and Yog-2 shared the same LB strain). In Yog-2, it was likely
that part of the non-ropy EPS (aggregated EPS and thread-like EPS)
was interacting with the protein gel and the rest stayed in the
serum. The EPS in the serum could prevent agglomeration although
not as potent as for the ropy EPS.
