Materials
The sweet potato tubers (Ipomea batatas Lam)
were obtained from a local market in Khon Kaen
Province, Thailand. Chemical compositions of the
sweet potatoes were analyzed following the methods
of AOAC (2000), Nelson (1944) and Somogyi
(1952). Color measurements (L*, a* and b* values) was
measured by UltraScan XE (Hunter LAB., USA) and
the browning index (BI) was calculated (Saricoban
and Yilmaz, 2010). Differential scanning calorimetry
data (gelatinization temperature and enthalpy) were
determined following the methods of Ahromrit et al.
(2007)
