The confectionery industry, with a sales volume of
13.9bn Euros and 53,600 employees (2008) is one
of the most important food industries in Germany.
In recent years, the topics such as energy efficiency
and sustainability have been increasingly the
subjects of public discussions and therefore they are
of growing interest to the confectionery industry
and the manufacturers of confectionery machines.
This guideline considers the processes within this
industry and provides orientation for a possible
approach towards more sustainable production.
