indicating that exudate amount
was affected by freeze–thaw. The protein concentration of exudates
was 92.50–96.20 mg/ml during cold storage; however, no significant
difference in protein concentration was observed among the treat-
ments. The results of total protein content showed a similar trend to
that of exudate amount. All treatments had lower exudate amount
and total protein content values at the initial storage day than that
at the latter storage days (p b 0.05). No significant effect of exudate
removal or the combined effect of freeze–thaw and exudate removal
was observed for exudate amount, protein concentration, or total
protein content (p > 0.05).
