3.2. Effect of EKWE and ECBE oxygenated at different pHs on gel properties of cuttlefish skin gelatins
3.2.1. Gel strength
Gel strength of cuttlefish skin gelatins with 1% EKWE or ECBE oxygenated at different pHs is shown inFig. 2. For the same
extract, the gel strength of gelatin increased as the pH used for oxygenation of the extract increased (po0.05). At the same pH, EKWE showed a greater gel strengthening effect than ECBE (po0.05). This was probably associated with the higher content of tannin in the former. Gelatins with EKWE or ECBE oxygenated at pH 7 had increased gel strengths by 12.1% and 7.1%, respectively, compared with that of the control (without extracts). At pH 8, the gel strength increased by 17.4% and 17.7%, respectively (po0.05). The gelatin with 1% EKWE or ECBE oxygenated at pH 9 had gel strength increased by 44.2% and 30.6%, respectively.
