The information about effect of complexation on stability and
antioxidant activity of astaxanthin is very scarce. Therefore, the
aim of the following study was to evaluate storage stability of
astaxanthin/HPCD complex under different storage temperatures,
and study its antioxidant activity by three different methods: (1)
ferric ion reducing antioxidant power assay, (2) 1,1-diphenyl-2-
picrylhydrazyl (DPPH) radical scavenging activity assay, and (3)
hydroxyl radicals scavenging activity assay.
