with L. monocytogenes to assess the growth potential of this pathogen
(EU CRL for Listeria monocytogenes, 2008). Results are shown
in Table 3. The aw, pH and NaCl-content of the products were well
within the limits to enable growth of L. monocytogenes (ICMSF,
1996). Results show an acceptable microbial quality of the paella.
The second and third batch contained elevated concentrations of
LAB (3.5 log CFU/g) and only the second batch contained low
concentrations of B. cereus (max. 2.48 log CFU/g).
