From ANOVA study, it was found that total phenolic (p = 0.0019) and proanthocyanidin (p = 0.0000) content of the solvent-extracted color was significantly higher than the color extracted by SC-CO2 extraction.
However, no significant difference (p = 0.1140) was found between the total flavonoid content of the color extracted by either method. It could therefore be concluded that solvent extraction yielded significant amount of phytochemical compounds along with anthocyanins; whereas, SC-CO2 extraction was more selective in isolating anthocyanins.
