Oil L2 revealed a high intensity of olive fruity odour, also confirmed by the retronasal route, not significantly different from Oils L1 and G1, and higher than Oil G2. Also, the pleasant flavours of Oil L2 were higher than Oils G1 and G2 and were characterized by an almond flavour. Oil G1 had an olfactory intensity of olive fruitiness and of pleasant flavours higher than Oil G2. The pleasant flavours of Oil G1 included tomato and almond flavours. Oil G2 presented a less distinctive sensory profile, having the lowest intensity of all the attributes, and did not reveal any specific pleasant flavour. No significant differences in bitterness and pungency were found among Oils L2, G1 and G2.
