Furthermore, chitosan coatings incorporated with
effective antibacterial agents can also enhance the fish samples’
antimicrobial capacities. The antibacterial performance
of GA has been reported in the literature. As expected, the
antibacterial effect of chitosan coating solutions containing
GA was improved because GA exerts strong antibacterial effects
against pathogens and spoilage bacteria. The strong antibacterial
effect of chitosan combined with GA against
Escherichia coli, Salmonella typhimurium, Listeria innocua,
and Bacillus subtilis was reported recently by Sun et al.
(2014). Moreover, the mechanical strength of the chitosan
film was significantly increased after the incorporation of
GA, which expanded the scope of chitosan-based applications.
