3.6. Sensory analysis
The results concerning sensory assessment of the apples coated with pullulan coatings with or without SH extract addition are presented in Table 5. The assessment included features such as color, aroma, degree of coating wrinkling and adhesion, as well as general appearance. The materials were additionally evaluated after coating removal. Color was the parameter which made the first impression. The materials coated with pullulan coating with SH extract obtained lower color scores compared to the scores of uncoated materials and those coated only with pullulan coating.
