The concentration reached 26 kg m at 12 h. The concentration and optical purity were 28 kg m and 95% e.e. at 36 h,
respectively. The yield based on the weight of sugars soluble after 36-h hydrolysis of the bran by amylase and
cellulase (36 kg m from 100 kg m of the bran,Fig.1) was 78%. No fungi were observed in the broth under
an optical microscope. The lower concentrations of L-lactic, formic, and acetic acids than those in the reaction mixture of the enzymatic saccharification at pH 6.8 (Fig. 2) suggest that the growths of the indigenous bacteria were suppressed at pH 5.0.
