Moisture of the fibres was determined by the oven method at 103 ±1ºC in C in triplicate, and water binding capacity (WBC; n = 3) after soaking 5 g fibre in 45 g demin eralised water (3 g : 47 g for FP) for 1 d and subsequent centrifugation for 10 min at 2000 g (Chen, Piva, & Labuza, 1984; Yamazaki, Murakami, & Kurita, 2005).
