A crude pectin extract was obtained after alcohol precipitation and drying.
The effect of HCl concentration (0.02, 0.04, 0.06 and 0.08 M) and extraction time (30, 60 and 90 minute) on yield of watermelon rind pectin was investigated.
The yield of extracted pectin ranged from15.266 ± 2.716% to 27.55 ± 3.952% (w/w, based on dry weight of watermelon rind).
The most appropriate extraction condition with highest pectin yield was obtained from the condition with 0.02 M HCl and 60 minute extraction time
