Xylanases (EC 3.2.1.8) hydrolyze the b-1,4 bond in the
xylan backbone, yielding short xylooligomers. Most known
xylanases belong to GH families 10 and 11 (over 300 gene
sequences are known), and about 20 more xylanase genes
