The microorganisms used in this study belong to the culture
collection of the Centro de Referencia para Lactobacilos (CERELACONICET)
and were isolated from Andean amaranth (A) and Real
Hornillos quinoa (Qr) sourdoughs (Table 1). MRS broth (Biokar Diagnostics)
was used for maintenance of Lactobacillus strains and
GABA production.
