Breaking air cell leads to internal bubbles in eggs. This phenomenon could be directly visualized in hyperspectral images. In this study, PCA was used to reduce spectral dimensionality of the hyperspectral transmittance images, and to improve readability of hyperspectral data for exacting egg features. An example of PCA analysis of bubble and intact eggs was shown in Fig. 4. Fig. 4a and b are the PC1 and PC2 images of the sample with bubble. Fig. 4c and d are the PC1 and PC2 images of an intact egg. As an egg with bubbles, there is a bubble shadow in the middle of the egg images. On the contrast, the intact egg doesn’t have. It is difficult to segment the bubbles characteristic with segmentation algorithm, and the texture analysis is used in the further analyzing.
