The experimental correlation obtained here can be used to estimate the convective heat transfer coeffcient for particles of any geometry, and with equivalent par- ticlediameterbetween1and2cm.
Experimental results obtained here show that the freezing medium temperature is the most important variable, in ̄uencing both, freezing times and frozen product texture. Convective heat transfer coeffcients improve at velocities above the minimum particle agi- tation velocity; however, higher velocities cause higher damage in the ®nal frozen product texture.
