The results showed that the linear model was found
to be the most suitable model for describing the electrical conductivity
curve of the ohmic heating process of pomegranate
juice with R2 of 0.9986–0.9930, v2 of 0.0005–0.0025 and RMSE
of 0.0179–0.0406. The results showed that as the voltage gradient
increased the role of energy losses increased, in other words
SPC values decreased.
