Different extracts showed their ability to reduce TPTZ–Fe
(III) complex to TPTZ–Fe (II) complex differently as shown
in Fig. 1c. Among all extracts tested, those using 60%or 80%
ethanol as extraction solvent showed the highest FRAP (P<
0.05). The result indicated that the extract could easily donate
the electron to Fe (III) most effectively, thus reducing it to Fe
(II). The reducing capacity measures the ease of the compounds
in donating electrons
