3.2. L*, a*, b* colour parameters
Visual observations of the edible bird’s nests were from offwhite
to ivory for the house nests and light brown for cave
nests. Quantitative colour measurements using parameters,
L*, a* and b* of the edible bird’s nests were determined. The
house nests had significant higher L* value compared to cave
nests, 50.7 ± 1.7 and 37.2 ± 0.8, respectively (Fig. 2). They are
lighter in colour and this suggests that the edible bird’s nests
can be differentiated and classified using lightness parameter
of L* P 49 for the house nests and L* 6 38 for the cave nests.
The minimum lightness limit for house nests was obtained
by deduction of average value with standard deviation while
the maximum lightness limit for cave nests was by addition
of average value with standard deviation. The colour analysis
of edible bird’s nest determined in duplicates obtained high
confidence levels of 99% using one-way ANOVA which indicates
the robustness of these results
