Lactobacillus plantarum has a greater capacity to withstand adverse
processing conditions compared to other microorganisms
(Ferrando et al., 2016). The encapsulation yield did not show significant
changes (p > 0.05) in the viability of the microorganisms
when PSY and INU were used as prebiotics, indicating that these
two materials confer greater protection or greater affinity to the
probiotics than does PS in the encapsulation process.
