A total of 150 kg of coffee cherries (Coffea arabica var. Mundo Novo) were manually harvested at the mature stage from a farm located in the city of Lavras, Minas Gerais State, Brazil, and mechanically depulped using a BDSV-04 Pinhalense depulper (Pinhalense, Sao Paulo, Brazil). Approximately 75 kg of depulped beans were then conveyed in a clear water stream to tanks and left to ferment for 48 h in accordance with local wet processing method.
