Correlations obtained between relative antioxidant capacity
index, calculated by assigning all assays equal weight, and
activities measured, additionally proved the polarographic
assay to be reliable in the analysis of honey. Since the assay
has been already used in propolis analysis, application on honey
shows its versatility in analyzing honeybee products. Based on
the results discussed in this study, reliable, fast, simple and low
cost DC polarographic assay represents a valid alternative to the
widely used AO assay and can be used in analysis of honey as an
indicator of its total AO activity.
