Aliquots (70 ml) of filter-sterilized Chardonnay
(12.8% glucose, 12.2% fructose, 0.0035% glycerol, 0.0017% acetic
acid) and Pinot Noir (12.5% glucose, 12.2% fructose, 0.059% glycerol,
0.0059% acetic acid) grape must (Calona Vineyards, British
Columbia, Canada) were inoculated with the appropriate yeast
strain. The yeast had previously been grown to mid-log phase, and
assayed for cell density in order to ensure equivalent inoculations
and minimize lag phase
