A-PONG
“A-Pong” is a sort of pancake typical for the province Phuket. Actually a A-Pong is original of Malaysia, where it is known as “Khanom bueang”. Later this dessert became popular in Phuket because a lot of malaysian inhabitants of the city Penang has moved into Phuket. Thus the “A-PONG” had became a local pancake typical for Phuket as well.
The people of Phuket eat “A-Pong” with coffee or tea early in the morning or during the day as a simple snack. “A-Pong” can be bought at well-known shops like Bang-Niew, the Kaset and Down-Town market in Phuket.
Ingredients:
- 2 cups rice flour
- 1/2 cup sugar
- 1/2 cup coconut cream
- 1 cup coconut milk
- 1 tsp yeast
- 1 egg yolk
-1/2 tsp vegetable oil
How to make:
-Pour the flour, sugar, and yeast in a bowl
- Add a 1 cup coconut milk
-now add the egg yolk
- stir well
-leave the bowl with the mixture on a warm place (at room temperature) for approximately one hour
-give the coconut-cream into the bowl.
-heat the frying pan using a small flame/medium temperature
-Wipe the pan with vegetable oil, then pour a full scoop of the mixture into the pan, drawing a circle
-The “A-PONG” is ready to eat, when a brown, crispy surface is visible
